Your key responsibilities

We are looking for a skilled and dedicated Night Chef to join our exceptional kitchen team, working alongside renowned chefs Adam Byatt and Ross Sneddon. This is an exciting opportunity to play a key role in maintaining our culinary excellence during the overnight shift, ensuring consistency and quality throughout all hours of operation.

As Night Chef, you will take responsibility for the kitchen during the night, overseeing food preparation, production, and service for late-night and early-morning offerings. You will work independently or with a small team to maintain high standards, ensure food safety compliance, and prepare for the next day’s service. Your organisation, reliability, and attention to detail will be vital to the smooth running of the kitchen overnight.

As a valued part of the Forte family, you will:

• Take full ownership of the kitchen during night operations, ensuring smooth service and maintaining high standards of food quality and hygiene.

• Ensure that all overnight tasks—such as mise-en-place, stock rotation, and cleaning—are completed to an exceptional standard in preparation for the next day.

• Lead by example, maintaining a calm, professional, and efficient environment overnight.

• Support the wider kitchen team by communicating key updates and ensuring a seamless handover to the day team.

• Take responsibility for food safety, HACCP compliance, and adherence to company standards during your shift.

• Seek opportunities to improve processes and contribute to the continued success of the kitchen.

• Be knowledgeable of our overnight service offerings, guest expectations, and uphold the standards that define Rocco Forte Hotels.
